Winemaking: Everything is destemmed, before a slow, gentle maceration. They do about 3 pump-overs in total at the beginning of the fermentation; but then leave it alone: they do not want to over-extract the wine. Once the wine has undergone malo, it settles in the vats before racking it to concrete tanks; where it spends 12 months. Bottling at the end of August 2021 in a waning moon.

Sulphur: 15mg/l total

Soil: Gravelly soil and limestone
